Ingredients

Scale
  • 32 ounces frozen cubed hash browns (thawed)
  • 2 cups sharp cheddar cheese (shredded)
  • 1 ½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ½ cup chicken broth (room temperature)
  • 2 large yellow onions (thinly sliced for topping)
  • Vegetable oil for frying
  • Kosher salt
  • Black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick spray.
  2. In a skillet, melt ¼ cup of butter over medium heat. Add diced onion and sauté until translucent, about 5-7 minutes.
  3. In a large bowl, combine thawed hash browns, sautéed onions, shredded cheese, sour cream, garlic, flour, salt, black pepper, cayenne pepper, chicken broth, and milk. Mix until well combined.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. In another skillet, heat vegetable oil over medium-high heat. Fry the thinly sliced onions in batches until golden brown and crispy, about 10-15 minutes.
  6. Sprinkle the crispy fried onions over the potato mixture in the baking dish. Bake for approximately 50 minutes until bubbly around the edges.
  7. Let cool for about 10 minutes before serving.
