  • 1 pound asparagus
  • 2 zucchinis
  • 2 yellow squashes
  • 6 button mushrooms
  • 3 cloves of garlic
  • 2 tablespoons fresh rosemary
  • 2 tablespoons dried parsley

Instructions

  1. Prepare your veggies by washing and cutting them: trim asparagus ends, slice zucchinis and squashes into half-moons, and chop mushrooms.
  2. In a large skillet over medium heat, add olive oil. Sauté chopped garlic and mushrooms for about 5 minutes until tender.
  3. Add asparagus, zucchini, and squash to the skillet, stirring to coat in oil. Cook for 10-15 minutes until crisp-tender.
