  • 1 tablespoon extra-virgin olive oil (divided)
  • 1½ cups water (room temperature)
  • 1 teaspoon active dry yeast
  • 3 cups bread or all-purpose flour
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher or fine sea salt
  • 2 teaspoons finely chopped fresh rosemary

Instructions

  1. Preheat the oven to 400°F (204°C) and roast the garlic wrapped in foil with olive oil, salt, and pepper for about 40 minutes.
  2. In a bowl, dissolve yeast in water for about 10–15 minutes until frothy. In a large bowl, mix flour, salt, oregano, and rosemary.
  3. Combine yeast water and smashed roasted garlic; stir until a sticky dough forms.
  4. Cover the bowl with a towel and let it rise at room temperature for 8–10 hours.
  5. Shape the dough into a ball and refrigerate for up to 48 hours.
  6. Preheat your oven to 450°F (232°C). Transfer the dough onto parchment paper and score the top.
  7. Bake in a Dutch oven covered for about 30 minutes; then uncover and bake for an additional 15–20 minutes until golden brown.
  8. Allow cooling on a wire rack before slicing.
