  • 1 (14-16 pound) whole turkey
  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)
  • Fresh herbs and peeled garlic cloves for stuffing

Instructions

  1. Remove the turkey from the fridge about an hour before cooking to reach room temperature. Preheat your oven to 450°F and prepare your baking sheet.
  2. Mix softened butter with sage, thyme, rosemary, minced garlic, salt, and pepper in a bowl to create the herb butter.
  3. Prepare the turkey by removing giblets, patting dry, and seasoning generously with salt and pepper inside and out. Stuff it with halved lemon, fresh herbs, and garlic cloves.
  4. Rub the herb butter all over the turkey except for the bottom. Tuck wings underneath and tie legs together if desired.
  5. Place turkey in a roasting pan breast side up; lower oven temperature to 350°F.
  6. Roast approximately 13 minutes per pound until internal temperature reaches 165°F.
  7. Let rest for 20 minutes before carving for juicy slices.
