  • 8 oz. dry rotini pasta
  • 9 oz. hard turkey slices, chopped
  • 6.5 oz. turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz. mozzarella pearls
  • ¼ cup red onion, sliced thin
  • ⅓ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp. Italian seasoning
  • ¼ tsp. red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook rotini pasta according to package directions until al dente; drain and cool completely.
  2. In a small bowl or jar, whisk together olive oil, red apple vinegar, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper.
  3. Chop turkey slices and turkey pepperoni into bite-sized pieces; prepare remaining vegetables.
  4. In a large bowl, combine cooled pasta with all prepared ingredients and toss with desired amount of vinaigrette.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
