  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small onion, sliced
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1/4 cup chicken stock or cold water
  • 1/2 tbsp cornstarch

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a bowl.
  2. Bring a pot of water to boil and blanch chow mein noodles for about 20–30 seconds until loosened but firm. Strain and set aside.
  3. Heat vegetable oil in a large pan over medium heat; sauté onions, cabbage, and celery for about 1 minute until softened.
  4. Push veggies to one side and add another tablespoon of oil; toss in noodles and prepared sauce.
  5. Stir-fry everything together until well combined and heated through. Serve hot.
