  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • pinch of salt
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 1 tbsp butter
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tsp sugar
  • ½ tsp salt
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. Prepare the kataifi pastry by mixing flour, cornstarch, sugar, and salt in a bowl. Add vegetable oil and water to create a smooth batter.
  2. Heat a nonstick pan over medium-low heat and pipe long strands of batter onto it to cook until pale.
  3. Melt white chocolate and double cream together until smooth. Blend in ground pistachios with salt for the filling.
  4. Toast kataifi strands in butter until golden brown and mix them into the pistachio cream.
  5. Chill the mixture, then shape into balls.
  6. Dip each ball in melted milk chocolate and garnish with chopped pistachios before refrigerating to set.
