  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or more cheddar)
  • ¼ cup grated parmesan

Instructions

  1. Preheat your oven to 375°F.
  2. Grease a 2-quart square baking dish with nonstick spray or butter.
  3. Layer the sliced potatoes and onions in the baking dish.
  4. In a saucepan, melt butter over medium heat; whisk in flour until combined.
  5. Gradually add almond milk while whisking; cook until thickened.
  6. Stir in cheddar cheese, garlic powder, salt, and pepper; mix until smooth.
