  • ½ white or yellow onion, cut into slices
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded (about 2 heaping cups)
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or substitute more sharp cheddar)
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat oven to 375°F.
  2. Grease a 2-quart baking dish.
  3. Layer sliced potatoes and onions in the dish.
  4. In a saucepan, melt butter; whisk in flour and almond milk until smooth. Add cheddar, garlic powder, salt, and pepper.
  5. Pour sauce over the potatoes; cover with foil.
  6. Bake for 45 minutes covered; then sprinkle gruyere and parmesan on top.
  7. Bake uncovered for an additional 30-45 minutes until golden brown.
