  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying
  • Sea salt flakes (optional for garnish)
  • Sweet chili sauce (for serving)

Instructions

  1. Prepare your breading station with bowls of flour mixed with chili powder, salt, and pepper; whisked eggs with water; shredded coconut; and panko.
  2. Dip each chicken tender first in the flour mixture, then in the egg wash, followed by coating it with both coconut flakes and panko.
  3. Heat oil in a skillet over medium heat and fry each coated tender until golden brown on both sides (about 2-3 minutes each).
  4. Transfer cooked tenders to a wire rack over paper towels to cool slightly before serving.
