  • 2 sheets of puff pastry (thawed)
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (seeds scraped out) or 2 tsp vanilla bean paste
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Line two baking trays with parchment paper.
  2. Roll out puff pastry sheets slightly and prick all over with a fork. Place on trays and cover with another sheet of parchment and a second tray to weigh down.
  3. Bake for about 35-45 minutes until golden and crisp, then cool completely before trimming edges.
  4. In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and mix well.
  5. Warm milk in another saucepan until steaming, then slowly pour into egg mixture while whisking continuously.
  6. Return tempered mixture to the saucepan and cook over medium heat until thickened (5-7 minutes). Stir in vanilla seeds and cold butter until smooth.
  7. Line an 8×8-inch pan with foil. Layer one piece of pastry at the bottom, pour custard on top, then press down the second piece of pastry.
  8. Cover tightly and refrigerate for at least four hours or overnight before slicing.
