  • 1 pound ground turkey sausage (or chicken)
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta in a large pot of salted boiling water until al dente. Reserve some pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Brown the ground turkey sausage until cooked through, then set aside.
  3. In the same skillet, sauté minced garlic until fragrant. Add sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes; stir in heavy cream and simmer for about 3-5 minutes.
  4. Mix in Parmesan cheese, cooked sausage, and spinach until wilted. Season with salt and pepper.
  5. Toss the drained penne into the skillet with the sauce, adding reserved pasta water as needed for consistency.
