  • 16 oz potato gnocchi
  • ½ cup vegetable broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 5 oz fresh spinach
  • ¼ teaspoon salt
  • coarsely ground black pepper to taste
  • red pepper flakes to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté crimini mushrooms with salt and pepper until golden brown.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Toss in potato gnocchi and pour in vegetable broth; simmer for 2-3 minutes until gnocchi float to the top.
  4. Stir in heavy cream, Italian seasoning, and smoked paprika; simmer for 2-3 minutes until sauce thickens.
  5. Add fresh spinach and stir until wilted. Adjust seasoning with salt, pepper, and red pepper flakes as desired.
