  • 1 small butternut squash, peeled and diced (about 3 cups)
  • 2 tablespoons olive oil
  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream
  • 2 cups baby spinach, roughly chopped

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender.
  2. In a large saucepan over medium heat, melt butter. Add garlic and sauté for 1 minute. Stir in orzo pasta and toast lightly for 2 minutes.
  3. Pour in vegetable broth and bring to a simmer. Cook for about 10–12 minutes, stirring occasionally until orzo is tender.
  4. Once cooked, stir in Parmesan cheese and heavy cream until well combined. Add chopped spinach and cook until wilted.
  5. Gently fold in the roasted butternut squash, adjusting seasoning as needed.
