  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley

Instructions

  1. Poke each potato with a fork and microwave in a bowl for four minutes to pre-cook.
  2. Flip the potatoes and microwave again for another four minutes.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Toss the mini creamer potatoes in olive oil until coated, then season with salt and pepper.
  5. Smash each potato gently to about 3/8" thick on the baking sheet.
  6. Bake for six minutes, flip, then bake for another six minutes until crispy.
  7. Garnish with fresh parsley before serving.
