  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped and toasted pecans
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant. Set aside to cool.
  2. In a mixing bowl, beat softened butter until light and fluffy.
  3. Add white and brown sugars; mix until well combined.
  4. Incorporate eggs and vanilla extract; mix until smooth.
  5. In another bowl, whisk together flour, salt, baking powder, and baking soda. Gradually add to the wet mixture.
  6. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
  7. Chill dough for at least one hour (or up to 24 hours).
  8. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop dough onto prepared sheets leaving space between each cookie.
  10. Bake for 12–14 minutes until golden around the edges.
  11. Cool on sheets for a few minutes before transferring to wire racks.
