  • 1 tablespoon coconut oil (or canola oil)
  • 1 onion (diced)
  • 1 tablespoon fresh ginger (minced)
  • 4 garlic cloves (minced)
  • 1 red chili (minced)
  • 28 ounces coconut milk (2 cans)
  • 2 to 3 tablespoons soy sauce
  • 3 tablespoons red curry paste
  • 1 tablespoon brown sugar
  • 1.5 lbs. chicken breast (sliced)
  • Salt and pepper to taste
  • Garnishes: cilantro, chili oil or crunch, scallions, fresh lime, steamed rice

Instructions

  1. In a large skillet over medium heat, melt coconut oil and sauté diced onion for about 4–5 minutes until softened. Add minced ginger, garlic, and red chili; cook until fragrant.
  2. Stir in coconut milk, brown sugar, soy sauce, salt, pepper, and red curry paste until well combined.
  3. Add sliced chicken breasts to the skillet and reduce heat to medium-low. Simmer gently for 15–20 minutes until chicken is cooked through.
  4. Remove from heat and let rest briefly before serving with lime juice and garnishes over steamed rice.
