  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • 8 oz Cool Whip
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Combine graham cracker crumbs and sugar in a bowl. Add melted butter and mix well. Press into the bottom of a 9×13 inch dish.
  2. Beat cream cheese with powdered sugar and coconut extract until smooth. Fold in half of the Cool Whip and spread over the crust.
  3. Whisk pudding mix with half-and-half until thickened. Spread over the cream cheese layer.
  4. Top with remaining Cool Whip and sprinkle with toasted coconut.
  5. Cover and refrigerate for at least six hours before serving.
