  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat softened butter and sugar until fluffy; add eggs one by one.
  4. Mix in vanilla and coconut extracts; alternate adding dry mixture and coconut milk until combined.
  5. Pour batter into pans and bake for approximately 25–30 minutes until a toothpick comes out clean.
  6. Cool the cakes on wire racks; prepare the frosting by beating cream cheese and powdered sugar until smooth. Fold in whipped heavy cream.
  7. Frost cooled cakes generously and top with shredded coconut.
