  • 45 pound turkey breast (bone-in, skin-on)
  • 1/2 cup unsalted butter (softened)
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon fresh thyme (finely chopped)
  • 1 tablespoon fresh sage (finely chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion (quartered)
  • 1 lemon (sliced)
  • 1 orange (sliced)
  • 1/2 cup chicken broth

Instructions

  1. Prepare the herb butter by mixing softened butter with lemon zest, orange zest, chopped herbs, minced garlic, salt, and black pepper.
  2. Pat the turkey breast dry and lift the skin to spread half of the herb butter underneath; rub the remaining butter over the outside.
  3. In a roasting pan, place quartered onion and lay lemon and orange slices on top. Set the seasoned turkey on top and pour chicken broth around it.
  4. Preheat oven to 350°F (175°C) and roast turkey for about 1 hour and 40 minutes, basting occasionally until golden brown.
  5. Let the turkey rest for at least 15 minutes before slicing to ensure juices redistribute.
