  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish

Instructions

  1. In a bowl, combine lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, chili powder, salt, and black pepper. Whisk well.
