  • 2 cups granulated sugar
  • ½ cup Dutch-processed cocoa powder
  • ½ teaspoon baking powder
  • 1½ teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup whole milk
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 1 cup hot water
  • 4 large egg yolks
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 2 cups heavy cream, divided
  • 3.5 oz dark chocolate, chopped
  • 4.5 oz white chocolate, chopped
  • 5 oz milk chocolate, chopped
  • ⅓ cup heavy cream

Instructions

  1. Preheat the oven to 350°F (180°C). In one bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs, milk, sour cream, oil, and vanilla until smooth. Combine both mixtures and stir in hot water until smooth.
  2. Divide batter into two greased and lined 8-inch round cake pans and bake for about 35 minutes. Allow cakes to cool completely.
  3. For the mousse, heat 1 cup of cream with vanilla until steaming. Whisk egg yolks with sugar and cornstarch until pale; gradually add hot cream while whisking. Heat until thickened; divide between two bowls and stir in melted dark and white chocolates respectively.
  4. Whip remaining cream to stiff peaks and fold into each chocolate mixture.
  5. Assemble by layering dark mousse on one cake layer followed by white mousse; chill for at least 30 minutes before topping with the second cake layer.
  6. For ganache, heat heavy cream until steaming and pour over chopped milk chocolate; let it sit before stirring to smooth consistency.
  7. Pour ganache over assembled cake and garnish as desired.
