  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temp)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips
  • 1 tbsp all-purpose flour (for dusting chocolate chips)
  • ¼ banana (2 long thin slices off of a banana)
  • 1 tsp granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together your dry ingredients: flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix together olive oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and mashed bananas until smooth.
  4. Gently fold the dry mixture into the wet mixture using a spatula.
  5. Dust your dark and semi-sweet chocolate chips with flour before folding them into the batter.
  6. Pour your batter into a greased loaf pan. Arrange thin banana slices on top along with some extra chocolate chips.
  7. Sprinkle with granulated sugar.
  8. Bake for about 55 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
