  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter, softened
  • 1 cup + 2 teaspoons whole milk
  • 1 teaspoon butter (for custard)
  • 1 vanilla pod
  • 2 egg yolks
  • 1/4 cup sugar (for custard)
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. Prepare the brioche dough by mixing flour, sugar, salt, and yeast in a stand mixer. Gradually add beaten eggs and knead until smooth. Incorporate softened butter and knead until slightly sticky.
  2. Cover the dough and let it rise for about 2 hours until doubled in size.
  3. For the custard, heat milk and butter with vanilla pod. Whisk egg yolks, sugar, cornstarch, and flour separately. Combine with hot milk and return to heat until thickened.
  4. Roll out the dough into a rectangle, spread cooled custard over half, sprinkle with chocolate chips, fold over, cut into rectangles, and place on baking sheets.
  5. Allow to rise again for another two hours. Brush with beaten egg mixture and bake at 350°F for about 10-12 minutes until golden brown.
  6. Brush warm brioches with sugar syrup after baking for a glossy finish.
