  • 2 tablespoons lemon juice

  • 2 garlic cloves, minced

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess water
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the chicken in a mix of olive oil, lemon juice, oregano, minced garlic, salt, and pepper for at least 15 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until golden brown and cooked through (about 6-7 minutes per side).
  3. While the chicken cooks, prepare the tzatziki sauce by mixing Greek yogurt with grated cucumber (squeezed dry), olive oil, lemon juice, minced garlic, fresh dill, salt, and pepper.
