  • 3 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 cup shredded Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 oz uncooked pasta (elbow macaroni, shells, or preferred shape)
  • ½ cup shredded mozzarella cheese (optional)
  • Fresh parsley or basil, chopped (for garnish)
  • Red pepper flakes (optional, for garnish)

Instructions

  1. Place chicken breasts at the bottom of the crockpot and top with garlic, Italian seasoning, salt, and pepper. Pour chicken broth over the chicken.
  2. Cover and cook on low for 4 to 5 hours until chicken is tender. Shred the chicken with two forks and return it to the pot.
  3. Stir in cream cheese and Parmesan until melted. Add uncooked pasta, cover, and switch to high heat; cook for an additional 30–45 minutes until pasta is tender.
  4. If desired, sprinkle mozzarella cheese on top during the last few minutes of cooking. Garnish with fresh herbs before serving.
