  • 1 ¾ cups heavy cream
  • 1 cup mascarpone cheese (room temperature)
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed coffee (cooled)
  • 7 oz ladyfinger cookies
  • 1 ½ cups cherry preserves or cherry pie filling
  • Fresh cherries (for topping)
  • Unsweetened cocoa powder (for dusting)

Instructions

  1. In a large bowl, whip heavy cream until soft peaks form. Fold in mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. In a shallow bowl, combine cooled coffee with almond-flavored syrup for flavor.
  3. Dip ladyfingers quickly in the coffee mixture and layer them at the bottom of a 9×9-inch dish.
  4. Spread half of the cream mixture over the ladyfingers, followed by half of the cherry preserves and fresh cherries.
  5. Repeat layers: add another layer of dipped ladyfingers, remaining cream mixture, and top with remaining cherry preserves.
  6. Cover and refrigerate for at least six hours or overnight.
  7. Dust with cocoa powder before serving and garnish with fresh cherries.
