  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and pierce potatoes with a fork. Rub with olive oil, salt, and pepper.
  3. Bake potatoes on a baking sheet for 45 minutes or until tender.
  4. While baking, cook ground beef in a skillet until browned; drain excess fat.
  5. Stir in taco seasoning according to package instructions and simmer for 5 minutes.
  6. Allow potatoes to cool slightly, then cut a slit on top and fluff the insides.
  7. Fill each potato with seasoned beef and top with cheddar cheese.
  8. Return to oven for 5 minutes until cheese is melted.
  9. Add sour cream and desired toppings before serving.
