  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1 tablespoon fresh sage (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil water in a large pot and cook the tortellini according to package instructions until tender.
  2. While the tortellini cooks, slice the mushrooms and chop the sage.
  3. In a skillet, heat 1 tablespoon of butter and olive oil over medium-high heat. Add chopped sage and cook until crispy. Set aside.
  4. In the same skillet, add sliced mushrooms and remaining butter along with minced garlic. Sauté until golden brown.
  5. Drain the tortellini and add it to the skillet with sautéed mushrooms. Mix in crispy sage and parmesan cheese, season with salt and pepper, then serve immediately.
