  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together flour and sugar.
  3. In another bowl, mix ricotta cheese, egg, vanilla extract, and lemon zest until smooth.
  4. Gradually combine the wet and dry ingredients to form a soft dough.
  5. Let the dough rest for about 30 minutes.
  6. Roll out the dough to about ¼ inch thick and cut into rectangles.
  7. Mix ricotta with chocolate chips and pistachios for filling.
  8. Place filling in the center of each rectangle, fold over, and seal.
  9. Bake on lined sheets for 15-18 minutes until golden brown.
  10. Allow to cool before dusting with powdered sugar.
