  • 1 tablespoon espresso powder
  • ¾ cup (165 g) brown sugar
  • ¼ cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • ½ tablespoon vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cups (175 g) all-purpose flour
  • ½ cup (80 g) Heath toffee bits with chocolate
  • Flaked sea salt for topping

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown. Stir in espresso powder and let cool.
  2. Beat the cooled butter with sugars until fluffy. Mix in egg and vanilla until smooth.
  3. Combine dry ingredients, then add to the wet mixture until just incorporated.
  4. Fold in toffee bits and chill the dough for at least 2 hours.
  5. Preheat oven to 350°F (175°C) and bake chilled dough balls on parchment-lined sheets for 11-13 minutes.
  6. Allow to cool slightly before transferring to a wire rack.
