  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon filets (about pounds)
  • 2 medium peaches, thinly sliced

Instructions

  1. In a medium bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes. Reserve half for glazing.
  2. Marinate salmon filets in the mixture for at least 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Sear salmon skin-side up in an oven-safe skillet for 2-3 minutes; flip and add peach slices.
  5. Pour reserved marinade over salmon and bake for 12-15 minutes until cooked through.
