  • 150 g chocolate biscuits
  • 45 g unsalted butter, melted
  • 300 g soft cream cheese
  • 150 ml double cream (heavy cream)
  • 60 g caster sugar
  • 410 g black cherry fruit filling (tinned)
  • 150 g blackberries
  • 125 g blueberries
  • Zest and juice of 1 lime
  • 60 g dark chocolate (for garnish)

Instructions

  1. Prepare the biscuit base by crushing the chocolate biscuits into fine crumbs and mixing them with melted butter. Press firmly into a tart pan and chill for 30 minutes.
  2. For the cheesecake filling, beat the cream cheese with caster sugar until smooth. Gradually whisk in the double cream until thickened. Spoon over the chilled base and let it set in the fridge for at least 4 hours or overnight.
  3. Mix together the black cherry filling, blackberries, blueberries, lime zest, and juice. Spread over the set cheesecake.
  4. Garnish with grated or melted dark chocolate before serving.
