  • 5 pounds apples (about 11 large apples)
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • Juice from half a lemon (2 tablespoons)
  • 1 teaspoon vanilla extract

Instructions

  1. Select and prepare about 5 pounds of mixed apples (tart and sweet varieties work best).
  2. In a skillet, zest and juice half a lemon, then add sliced apples along with sugars, flour, salt, and spices.
  3. Cook the mixture over medium heat for approximately 20 minutes until the apples are tender but still maintain some shape.
  4. Allow the filling to cool completely before assembling.
  5. Roll out your prepared pie crust in a deep-dish pie plate, fill with cooled apple mixture, cover with another crust layer, crimp edges, and chill.
  6. Preheat your oven to 425°F (220°C) and bake for 15 minutes; then reduce temperature to 350°F (175°C) and bake for an additional 45 minutes or until golden brown.
