  • 1 pound cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms with a damp paper towel. If larger, halve them for even cooking.
  3. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, pepper, and red pepper flakes if desired.
  4. Add mushrooms to the marinade and toss thoroughly.
  5. Spread the marinated mushrooms on the prepared baking sheet in a single layer.
  6. Roast in the preheated oven for 20–25 minutes until tender and caramelized, stirring halfway through.
  7. Garnish with fresh parsley before serving.
