  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • Dried thyme, dried rosemary, bay leaf, salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium-high heat, warm the olive oil. Add beef cubes in batches; sear until browned on all sides. Remove from pot.
  2. In the same pot, add onion and garlic; sauté for about 3–4 minutes until translucent.
  3. Stir in tomato paste for one minute. Deglaze with a splash of beef broth by scraping up any browned bits.
  4. Return browned beef to pot along with remaining broth and vegetables (carrots, potatoes, parsnips, celery).
  5. Season with thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil; reduce heat and let simmer covered for about 2 hours or until beef is tender.
  6. Taste before serving; adjust seasoning if needed. Garnish with fresh parsley.
