  • 4 small or 3 large red gala apples (diced)
  • 340 g all-purpose flour
  • 225 g granulated sugar
  • 125 g butter (room temperature)
  • 200 g dark brown sugar
  • 3 eggs (room temperature)
  • 225 g sour cream (14-18%, room temperature)
  • 1 tbsp maple syrup
  • 1 1/2 tsp ground cinnamon
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 40 g vegetable oil (e.g., canola oil)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar
  • 1 tsp sour cream
  • 12 tsp water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, toss diced apples with granulated sugar and cinnamon; set aside.
  3. For the crumb topping, mix flour, dark brown sugar, and cinnamon; blend in butter until crumbly.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt.
  5. Cream together butter and granulated sugar until fluffy. Add eggs one at a time followed by sour cream and oil; mix well.
  6. Gradually combine dry ingredients with wet ingredients until just blended; fold in apple mixture.
  7. Pour half of the batter into the prepared pan; sprinkle with half of the crumb topping. Add remaining batter followed by remaining crumbs on top.
  8. Bake for about 45-50 minutes or until golden brown and a toothpick comes out clean.
  9. Allow to cool slightly before drizzling with maple glaze made from powdered sugar, maple syrup, sour cream, vanilla extract, and water.
