  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel topping)
  • ¼ teaspoon salt (for streusel topping)
  • ¼ cup cold unsalted butter (cubed, for streusel topping)
  • 8 oz cream cheese (softened, for frosting)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Prepare the streusel topping by mixing flour, brown sugar, oats, cinnamon, and salt. Cut in cold butter until crumbly; refrigerate.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and granulated sugar until fluffy. Add eggs one at a time and then mix in vanilla extract.
  5. Gradually mix in dry ingredients alternating with milk until just combined. Fold in diced apples gently.
  6. Fill muffin cups two-thirds full with batter and sprinkle on streusel topping.
  7. Bake for 22–25 minutes until golden brown; cool before frosting with cream cheese mixture.
