  • ½ cup unsalted butter (room temperature, divided: 6 tablespoons for the dough and 2 tablespoons melted for brushing the baked cookies)
  • 1 ¾ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • ¼ teaspoon ginger
  • ½ teaspoon nutmeg
  • ½ cup granulated sugar
  • ¼ cup plus 2 teaspoons light or dark brown sugar (packed)
  • ¼ cup apple butter or applesauce
  • 2 eggs
  • ¼ teaspoon vanilla
  • 3 tablespoons butter (melted) for coating
  • ¼ cup sugar for coating
  • ½ teaspoon cinnamon for coating

Instructions

  1. Preheat your oven to 350°F. In a saucepan, reduce apple cider to 1/4 cup over medium heat.
  2. In a bowl, sift together flour, baking powder, baking soda, salt, and spices.
  3. In a large mixing bowl, beat room-temperature butter with sugars until fluffy. Mix in vanilla and eggs one at a time.
  4. Add the reduced apple cider and apple butter; mix until combined.
  5. Gradually add dry ingredients until just mixed.
  6. Scoop dough onto lined baking sheets; bake for 11-13 minutes until slightly firm.
  7. Cool before filling with either Buttercream or Cream Cheese Icing.
