  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • ¼ teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat oven to 350°F and grease a 9” square baking dish.
  2. In a large pan, boil apple cider until reduced by half (about 5 minutes). Measure out ¾ cup and whisk in diced butter until melted.
  3. In a medium bowl, mix eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until blended.
  4. Gradually add the boiled cider to the wet mixture while whisking.
  5. Stir in flour until just combined; do not overmix.
  6. Pour batter into the prepared dish and bake for 22-25 minutes until golden-brown.
  7. Cool for 5 minutes; top with butter and sprinkle with cinnamon-sugar before serving.
